Cortar en presas. Caldo: Poner a hervir a fuego lento y tapado por 1 ¼ horas: 10 tazas de agua, 2 cucharadas de sal, la cabeza, patas y espinazo del pollo, poro y ramas de apio. Salpimentar las presas del pollo y dorarlas en aceite caliente. Retirar. En el mismo aceite freir los dientes de ajo chancados, la cebolla picada y el ají. Cocinar unos minutos. Añadir el culantro, condimentar con sal y pimienta. Agregar el caldo y la cerveza negra. Dejar hervir y luego poner las arvejas y el pimiento. Incorporar el arroz y las presas de pollo doradas 15 minutos antes de servir. A los 10 minutos de esta cocción agregar las papas amarillas peladas, en mitades. Cocinar a fuego lento, en olla tapada. Si se espesara demasiado se agrega más caldo o agua. Debe quedar con una consistencia acuosa, casi como una sopa espesa.
